Edwards pies have a special place in my heart. My mother absolutely loved them because they were so close to a pie she created in 1958! She was a fabulous home cook and had entered some local cooking contests. Her Peanut Butter Chiffon Pie was one of her winners. So light and fluffy with her homemade crust, made from scratch using the ingredients available back then. I vividly remember her making the peanut butter filling, which was a tedious job, using a double boiler at one point…. whipping the cream, whipping the egg whites….folding in the peanut butter mixture….making every pot in the house dirty! What a treat when she would practice making her recipe. There was never any complaints in the house about having to eat her Peanut Butter Chiffon Pie….AGAIN!

Now, in this day and age, we can simply go to the store and buy a delicious Edwards pie, my favorite being the Chocolate Cream Pie (my mother’s favorite, too). Even at 98 years old, she would talk about those pies! Sadly, she is no longer with us, but, she never stopped loving those Edwards pies. I think they reminded her of that wonderful pie she once made that won her a Grand Prize in a local cooking contest in 1958.

Pictured is my mother, making another prize winning creation. Unfortunately, pictures of her with her Peanut Butter Chiffon Pie have been lost to the ages.
